Terminology integrity issues abound in the coffee world. Consider generic, hollow quality differentiators like “premium” or “gourmet.” Or the fuzziness associated with “direct trade.” Or the very phrase “specialty coffee,” which, despite having some grounding through accepted standards for green coffee as developed by the Specialty Coffee Association of America, becomes much more ambiguous when roasting and brewing get involved. Or, finally, the contemporary star of compromised coffee descriptors, the murky and oft-suspiciously-marketed “third wave.” The one I’d like to focus on today is “craft coffee.”

The first poem to coffee was written in Mecca in 1511 by Abd-al-Kadir which goes: “Coffee, Thou dispensest sorrow, Thou art the drink of the faithful, Thou givest health to those who labour, and enablest the good to find the truth. Coffee, Thou art our gold! There where thou are offered, Men grow good and wise. May Allah overthrow thy calumniators and deliver thee from their wiles.”
